Sandi’s Dad’s signature salad dressing in the restaurant she grew up in.  A tomato based vinaigrette, with a touch of walnuts to add a creamy component.  It is rich and thick but only has 15 calories to a heaping tablespoon serving.  It is akin to a vodka sauce without the vodka.  Delicious to dress a pasta salad or use to sauté shrimp, calamari or scallops as you would olive oil.
It is great as a dressing on salads, slaws, or pasta salads.  Use as a rub or marinade on shrimp, chicken, pork or grilled vegetables.  A little goes a long way.
