About This Recipe
One of the families favorites, Hushpuppies. The Spicy O's gives them a sweet spicy accent that goes with many dishes or by themselves. They are a must for fried or grilled fish. Don't let that stop you from serving them with other foods; like salads, cold slaw, burgers, or Chicken Fried Steak.
1½ Cups Corn Meal
1 Cup Flour
1 Tbs Kosher Salt
2 Tsp Baking Powder
2 Tsp Baking Soda
½ Cup Milk
½ Cup Sour Cream
¼ Spicy O’s™ Chopped
¼ Cup Frozen Corn
Oil for frying, peanut or grapeseed - enough to submerge the hushpuppies.
Mix dry ingredients together in medium bowl.
In separate bowl, lightly beat eggs, blend in milk and sour cream. Add Spicy O’s™ and corn to wet ingredients; stir wet and dry ingredients together until moist. Let rest for 5 minutes.
Heat oil in frying pan (cast iron works best) until 360°, using a tablespoon drop batter into hot oil until golden brown, on one side turn (45-60 seconds) adjust heat turn with slotted spoon to brown other side.
Drain on paper towels. Keep warm in 200° oven.
Cook in small batches and let the oil temperature return to 360° before cooking the next batch. Repeat with remaining batter.
Serve with additional Spicy O’s™.
