About This Recipe

Polenta is available ready made at many stores or you can make it yourself. It can be served creamy or firm texture. Choose your preference!

A side dish recipe for your dinners.  Polenta
Ingredients

6 cups water

2 teaspoons salt

1 3/4 cups yellow cornmeal

3 tablespoons unsalted butter

½ cup or more - Parmigiana Cheese to preferred taste as a garnish or ingredient

Preparation

Soft Polenta - Bring 6 cups of water to a boil in a heavy large saucepan. Add 2 teaspoons of salt. Gradually whisk in the cornmeal. Reduce the heat to low and cook until the mixture thickens, and the cornmeal is tender, stirring often, about 15 minutes. Turn off the heat. Add the butter and cheese.  Stir until melted. Plate.

Firm Polenta – Pour the polenta in a flat pan or baking sheet. Spread into an even layer. Cover & refrigerate until firm. Cut into individual servings. At this point you may heat to serve, wrap to refrigerate for later servings or wrap to freeze. To serve - Heat a heavy skillet on top of the stove. Add oil or butter to a hot skillet. Place individual serving and heat or toast until hot. Plate.
