"Quick & Easy" and it showcases the signature heat and flavors of New Mexico's Hatch Green Chilies. It is so satisfying whether served hot or cold, winter or summer, because it is so fresh tasting.

Hatch Green Chile & Potato Soup (Hot/Cold)
Ingredients

1- Jar (16 oz.) Terra Verde Foods Hatch Green Chile Sauce

½ Cup Mexican Crema

1 Cup Half & Half or whole milk

1 Potato (10 oz.) Diced

¼ Tsp. White Pepper

½ Tsp Kosher Salt

Preparation

Cook diced potatoes until soft in water (about 8-10 minutes); drain.

Place all ingredients in saucepan bring to a simmer over medium high heat. Simmer 5 to 10 minutes to meld flavors.  The soup texture can be chunky or smooth.  If you prefer more texture,  serve immediately.  For a smooth texture transfer to a blender and  blender until smooth.  

Serve hot or chill to serve as a cold soup.
