I love this one skillet cooking recipe. It is easy, quick to make, smells so good, pretty to plate and delicious. That says it all!

Fish Vera Cruz
Ingredients

2 Lbs. Fish fillets (Snapper, Cod, Halibut, Talphia or other mild white fish) 

4 Tbs. Olive Oil
1 Large Sweet Onions, sliced
1 Cup Terra Verde Foods Green Chili Salsa
½ Cup Green Olives, sliced

2 Tbs. Capers (Optional)

Terra Verde Foods Lavender Pepper™ or your preferred salt and fresh ground black pepper

Preparation

Use an ovenproof sauté pan or cast-iron skillet large enough to hold the fish. Heat 3 tablespoons of the olive oil, sauté onions over medium heat until translucent, stirring occasionally.

Place fish on top of onions, drizzle with remainder of olive oil, season to taste with TVF Lavender Pepper™ or your preferred salt and pepper. Pour Terra Verde Foods Green Chili Salsa over fish, (1/4 Cup to cover each fillet.) add olives and capers. Cover with foil or parchment and bake in moderate 350 degree oven until thickest part of fish is done (10-15 minutes). You may need additional salsa if using whole fish.

Serve with rice and a salad.
